This is a fantastic machine! It makes wonderful bread, is extremely easy to use, and very easy to clean. Plus, it doesn't take up a lot of space in the corner of my counter. I love the fact that it's programmable and it also adapts well to sourdough. One of the best features is that is make traditionally shaped loaves that are easy to slice and look beautiful.
I don't normally write reviews, but I'm so happy with this, I thought I would this time.
I purchased this bread machine after a good bit of research. As with all bread machines, there are a few who complain about each model, but I just don't get what their issues can be with this one.
I read the instruction manual (not normal for me), which took about 20 minutes, and found it to be well-organized and has pictures and diagrams. The thing I took away from the manual was that accurate measuring of the ingredients is key.
That night, I took all the ingredients, measured them as accurately as I could, put them in the bread machine and turned it on. The clean up was a joke. A few dirty measuring spoons and cups, and that was about it. My wife and I ate a perfect loaf of raisin bread for breakfast. It was so easy, I honestly felt like it was cheating to make bread this way. Ridiculously easy, actually.
Now we just have to keep working out so we don't gain a bunch of weight eating all this wonderful bread I'm going to make.

This bread machine is great! I like the idea that it makes regular sized bread such as the way you can purchase it in a bakery or store. Also it does may different things other than just baking bread. When putting the ingredients together you don't have to warm the milk or water, and don't have to get butter or eggs at room temperture, this machine preheats before it begins to make the bread. The only thing I wish it had was a separate bake cycle.
We have baked bread about twice a week since we got our Zojirushi. We use fresh bread flour, and the loaves turn our perfect. We like the "add' cycle, and have begun experimenting with nuts, seeds, dried fruits, etc. The directions are easy to follow, and the bread is delicious. We figure we are saving the cost of the machine in less than one year, and each loaf, including electricity, costs under $1.00 at 2009 prices. We bake fresh bread as a gift. I purchased this bread machine after several hours of online research. I am very glad I trusted the great reviews this machine garnered. It does all the work, then practically cleans itself. My CAT could bake a perfect loaf in this machine!
I've been baking homemade bread for over 15 years. Have just recently turned to bread machines. I went through two Breadman machines in the past 18 months. While the Breadman's produced very good bread they were poorly designed from a mechanical perspective...kept breaking down.
So I thought I would "splurge" and get the Zojirushi BBCCX20. What a mistake!
The Zojirushi is well designed mechanically...very sturdy. But in over 20 attempts, trying various Zojirushi and other recipes, I cannot produce what I consider a good loaf of bread.
I will probably go back to making bread by hand.
I am a consumate cook, I cook nearly every meal our family eats at home. But I have only made bread a few times in my life, and I don't care much for impractical kitchen gadgets or machines, but this bread machine is terrific, simple, and makes an incredible loaf of bread. I highly recommend it!! Two of our family members are allergic to wheat- so we were a little weary if we could actually produce a good tasting loaf of non-wheat bread from a machine. Yes . . . . Yes. . . yes!!
I bought this product after my old, but reliable bread machine stopped heating. After 2 years of ownership this is what I have to say.
After much research I decided to go with the Zojirushi because I wanted to try baking horizontal loaves. Unfortunately this is one area where it didn't pan out. The loaves are always uneven after the final rise. Unless you can time it and reshape it before the final rise it will produce an uneven loaf.
A bigger problem is that the paddles are seated with an area underneath for the dough to get trapped. This is not a big deal when you are using the dough cycle. When you are baking as well it is very difficult getting the bread out. Once the bread is out I have often had to cut the paddles out of the bottom of the bread. I have messed up several loaves doing this.
Unlike the vertical loaf makers I have to pay more attention to make sure that the ingredients are getting mixed properly. This is not a big deal as long as you pay attention for the first few minutes of mixing.
In the end if the other features of the maker are excellent. If you are a baker that wants to experiment with cycles this is the breadmaker for you. I only wish I could name them somehow, because I keep forgetting which custom cycle is for what.
The bread recipes that come with the machine are somewhat limited. I went to the Cuisinart site and downloaded their extensive recipe collection and use it more often.
This is my fifth bread machine and by far the best. I have five kids and we haven't bought a loaf of store bread in 7 years. We have had the ZO for about 5 years. The others did not hold up well at all to very frequent use. The company was very helpful instructing me to rebuilding the inner workings of the machine about a year and a half ago. I have a recipe for 50/50 Whole Wheat v. Unbleached White Bread Flour that makes a satisfying bread for the kids who find only whole wheat a bit heavy. I also find that if I let the bread sit in the pan at the end of the cycle for exactly 30 minutes I can turn the bread ban over and shake it out onto a cooling rack and the paddles separate almost 100% of the time w/o tearing a big hole in the bread or staying in the loaf. The recipe goes like this.
2TBS of Olive Oil
15OZ of Beer (12OZ Beer + 3OZ Water)
1/2 Tsp Salt
2TBS Powdered Milk
3TBS Brown Sugar
2 Cups Unbleached White Bread Flour
2 Cups 100% Whole Wheat Flour
1 & 1/2 Tsp. of Fast Yeast for Bread Machines
Easy to remember once you make it a few times and at least at our house, everybody's happy!
My wife and I have had this machine for over a month now, and we really love it. There are so many reviews on this already so I'm only going to touch on what was important to us.
My wife is French and we consume a good amount of bread daily. We are also very particular about the texture and the crust of the bread. When we first got the Zo, we tried baking the bread in the machine, but after a few loaves, we really felt that we would only attain the crust we wanted by baking the bread in the oven. Even when we had the machine set to dark crust, the crust was too light and uneven. Also, we generally prefer to have a higher crust to bread ratio, and the shape that this (or any other) bread machine creates is not conducive to acheiving this ratio. So we kind of gave up on baking the bread in the machine, although we do it on occasion when we make a sweet bread.
The Zo makes dough REALLY well, and we've only had a flop once or twice and that was because we didn't verify that one of the mixing paddles was well placed. This was just a stupid mistake on our part.
After reading many reviews here and elsewhere, we felt that the sturdiness of this machine was well suited to our use. And now that we have the Bread Lover's Bread Machine Cookbook by Beth Hensperger and we bought the SAF yeast and gluten from King Arthur's Flour Co., we are making bread worthy of an upscale bakery! Our favorite recipe is the Traditional Baguette one. Overall, we are using this machine every other day and it feels like it will last us a long time.
The only thing I wish the machine had was a "Pause" button. It would have been helpful during the "loose paddle" incidents.
Overall - We are very pleased.
